I made This Chicken Parmesan, and I think it turned out pretty well. The things to note are 1. The cooking time listed (1 hour) is unrealistic, and even then does not include the time to make the tomato sauce, and 2. the cooking times seem to assume very thin chicken breasts, even after I cut the ones I had in half they were still too thick.

I realized a few days ago that my trip to England is really soon now, and all of a sudden I get on a plane in 30 hours. Too much to do, not enough time. Work is insane, and everyone is down for one reason or another. Argh.
