I made Gorgonzola stuffed Chicken Breasts on Wednesday.
I thought it was an interesting recipe, and it turned out decently, though I think I need to find a source of slightly smaller chicken breasts. It seems the chicken breasts Giant sells are much thicker than most recipes expect, so cooking times always seem to be on the low side.
I used skinless chicken breasts instead of skin on, mostly due to the crappy selection at giant when I checked. I may track down skin on chicken breasts and try yet again, though I'm happy with the results as is.
PS: note to self, next time either turn down the oven a bit and cook longer, or find a oil with a slightly higher smoke point. It smokes a little bit as is.
